That's what I'm talkin' about! See what a week of compulsive meal planning and steely will power can do?

This is one of my biggest weekly losses in a while. Throughout this entire week I was begrudging the meal plans and loathed the fact I had to spend half an hour during prime-time to prepare my meals for the next day...but it paid off!

Three cheers for Clean Eating Magazine which inspired my menu this week.

  10. @Jessica: Thanks for stopping by! I usually have 3 small meals and 2-3 snacks per day.
    BREAKFAST = Kashi cereal w/yoghurt OR Green 'monster' smoothie OR eggwhite omelette on lettuce OR blueberries in yoghurt w/Kashi granola bar
    SNACKS: fresh fruit OR Ryvita crackers w/Laughing Cow Cheese wedge OR celery sticks w/hummus
    LUNCH: usually leftovers from the night before
    DINNER: Well, this week I'll be enjoying....
    Monday: halibut with avocado & tomato salsa (see blog tomorrow for recipe!)
    Tuesday: thai basil pesto on rice noodles w/ground turkey
    Wednesday: lentil & bean casserole
    Thursday: cedar plank salmon w/ brown rice & grilled zucchini
    The rest is TBD!

    I didn't get around to posting a recipe on Tuesday, but I promise to get back on track this week. I ended up making homemade pesto for one meal and actually remembered to take pics. Woot!
